my wife fixes them in a way she calls basted, fried in lard , not turned, using the lard as a baste.

IDK what the hell kind of eggs I make according to GD.
I do sunny side up (no flipping), then cover the cast iron pan and pour in the tiniest amount of water for a few seconds to steam over the yolk and set the whites on top so it isn't like snot. The yolks are still runny and good for dipping though. |

Quoted: jfc, the eggs in the OP are too runny for "over medium" https://www.acouplecooks.com/wp-content/uploads/2020/12/How-to-Fry-an-Egg-050.jpg View Quote |

Wow.
A proper, three-minute poached egg would just ruin some of you folks' lives. |

When I order over easy, that's what I hope for, but I always get runny whites.

Give me two of those with four pieces of buttered toast all chopped up together and get out of my way.

Quoted: I call them 'Over-Easy', which is what most breakfast dives call them (I have never heard the term over medium), it's the way I make mine if I'm not making them 'Sunny Side Up' I like my eggs slightly runny. View Quote Over medium is just slightly more cooked, is just levels of fried egg. Pictured eggs pretty much what you gonna get ordering over easy, but headed toward medium. Over hard would be a set yolk. |

Quoted: If you order eggs"over easy" the whites will be runny View Quote Over means you flip the egg over to completely cook the egg white Easy means the yolk is runny Medium means the yolk is soft and starting to set Hard is a fully cooked yolk Fried Eggs 101 |

Fuck arfcom sucks at food.
Those are over easy. Medium means the yolk has started to set so there’s firm yellow at the periphery of the yolk. Borderline acceptable on a breakfast sandwich. Sunny side up should just barely be past runny whites, achieved with a lid or pan top while cooking. No white over the yolk which most cooks mess up. If you’re from a weird place in the country you can call these dippy. Over hard should be thrown in the trash. Poached should have firm white and runny yolk. People who serve poached eggs with solid yolks should be punched in the cock. If my eggs Benedict doesn’t explode all over my plate I’m sending it back. |

Could also be steamed. Add a tablespoon of water and cover no flip. Yields the same result.

Sometimes when I fry eggs 1 yolk will break but the others don't so I'm eating 3 sunnyside up and 1 hard all at the same time.
Its fucking mad I tell you |

Its fucking mad I tell you View Quote You might be already, but break them on a flat surface, narrow side pointed slightly up. Never a pan or bowl edge. I usually give up if I break one and opt for scramblers. |

You're body build up an immunity from being sick the first time. It's like, chickenpox. You can eat all the over easy eggs you want now. |

Over medium
If the whites are still a bit runny as well then it's over easy. I'll take either. Just none of that crispy, powdery yolk nonsense |

My first job was slinging eggs at a breakfast joint.
Over easy to me was white was just firm and very gooey yolk. If you wanted runny whites that was over light. |
