With its consistent profitability, financial health  and recent announcements of several products geared toward AI , it hasnt had the stock growth of many of the other companies that we have seen. What gives..?

SOXL has been doing very well.

But they will all rise and fall.
They say you can't time the market, but you can. Just don't be greedy and get out before the dip. And be patient if you don't sell before the dip cycle begins. I have made plenty of money of with NVDA.

NVDA is a healthy looking corpse.  Nothing ever goes in a straight line though.  After a period of high performance a pause is not unusual.  NVDA may rise again.

Many people ride the wave and after a while feel its run it course then try to find the next big wave.

I still have a Broker account with NVIDA and not selling as I don't want to pay taxes yet and don't need it yet.

In my retirement account, sold most individual stock (rebalancing) and put some of the NVIDA cash into MU.

Remember, don't try to make sense of the stock market.

On a related topic look at Nvidia’s PE ratio then look at Walmart and Costcos. Then compare growth rates.

I suspect the market is looking at $5T as the ceiling for market cap that it’s comfortable with for the time being. Once a few companies normalize it and consolidate there for a while a catalyst should come around that allows them to break through to the next level.
