i watched that video. i have no doubt that companies greed killed thousands. upon further youtube reviews i canceled that order and ordered this still used amazon though |

Carbon steel. Brand doesn't matter. Just make sure it's not one of the coated ones that say they're not coated...fuck those guys. Looks like you've already figured that out. Pick one you like the look of most. Welded vs riveted handle. Some are more fancy, some are more utilitarian. I have whatever cheapest one I could find on Amazon and it's been fantastic for probably 8 years now and I use it daily...I'm pretty sure it's a Matfer 11". It's my workhorse...my main pan for everything from making sausage gravy, eggs, searing steaks, making gravy, chicken, venison, vegetables, everything. Cast iron works too obviously. Carbon steel is lighter, changes heat faster, cheaper for new high quality pieces (Ok...it used to be cheaper...). Only thing cast iron is better for is searing because cast iron will hold heat better than carbon steel. It's minor though. So I checked my order....HO LEE FUK these have got expensive since I bought mine. 2018, this pan was $35. It's now $105 |

I went through a couple non-stick egg pans the same way once the coating’s damaged, it is basically done. I switched to a small aluminum pan instead and have not looked back. With a little oil or butter, eggs release just fine and there is nothing to flake off over time. This is the style I use https://www.allpointsfps.com/78855-8-in-aluminum-fry-pan-winco/ Not fancy, but simple and durable, which is why I prefer it now |
