Tonight I really wanted chili. Decided to pick up some Chipotles, dried ancho and dried guajillo peppers, roasted vine ripened tomatoes and bulb of garlic I roasted. That looks pretty good. How'd it taste? There's a thread here about it, if you want to see what some others use. https://www.ar15.com/forums/General/RECIPE-Chili-NO-beans-/163-1201464/ I don't use tomatoes in mine; I don't think they add anything, but food is subjective, so I'm not arguing the point (outside of GD). I've told a few people this before. If you recognize that chili is a stew, it helps conceive of how to do it correctly. Use beef cut and prepared the same way you would for a stew and simmer it for a long time. I won't call anything a "secret ingredient," but a few things that really helped improve the flavor for me is using smoked Spanish paprika, Mexican oregano, good cumin (as fresh as you can get it), and moritas -dried, smoked jalapeños. I've also been known to pour half a beer in there at some point (Shiner Bock, as God intended). A squeeze of lime juice at serving time wakes it up, too. Of course, I make the sauce by pureeing dried peppers (primarily anchos, but I like to mix things up). I also like to add in some fresh peppers and onions after assembly. These will break down over the long cooking time and help create a thick sauce (which I like). Attached File Early stages: Attached File It's not always this thick, but sometimes it is.
