You guys are killing me with the meatballs. Meatballs sub is a favorite. As coincidence would have it, I also made meatballs.

Mine are a riff on Indian Butter chicken. I swapped in lamb meatballs in plave of chicken thighs.

Those look nearly great!

IMO, I would have straightened out the racks to be nice and straight for presentation purposes. They cut / plate better / straighter, etc. They finish out how they started.., crooked, sometimes.

Made a Jerk marinade for chicken quarters tomorrow. Never made it before so pressure is on. Trying to decide weather to smoke the quarters or grill. I want a crispy skin but I think I want to smoke then sear on hi heat skin side down for a short time at the end.

It was really good been making it for years both long cook (braised in the oven) and shorter cook (in an instapot).
They both turn out excellent but I like the long cook because the house smells awesome for several hours.

I went with a lamb burger tonight. Actually a lamb double cheeseburger stacked with mushrooms and a cherry pepper secret sauce. I don't know why I don't make lamb burgers more often.

I can't cook for shit but a buddy gave me some fresh Wahoo steaks he caught yesterday.

So I threw some lemon pepper, paprika, salt, and olive oil on them and pan seared them to make some "blackened Wahoo". Cooked to an internal temp of 125F.

It was damn good! Was proud of myself. Even the wife and kids were impressed!

Seafood and spinach in puff pastry.   I did the cream sauce differently but it wasn’t as good.  Usually it’s butter, shallots, a splash of cream sherry.  This time I did a hint of Coleman’s mustard powder and turmeric and white pepper.

Eggplant parm isn’t my favorite, but there’s nothing wrong with it either.

I get it, but the "eggplant is gross" stuff strikes me as people who've never eaten it properly prepared.  It's not like a cilantro/soap thing.

Fried eggplant cutlets are legit, the original "parm".

ETA - this from a COMPLETE pasta whore.  I'm a junky for pasta dishes to a fault.

I'm with Tx on this. I would take a pasta lasagna all day every day over egg plant. It's not gross but IMHO, pasta is mo better.

That looks amazing! I may have to shamelessly copy this someday. I have never done a tartar, but raw tuna is one of my favorite things to eat.

ETA: Do you buy sushi grade tuna, or just any tuna that happens to look nice?

As I understand, tuna is the safest thing to eat raw. I've eating it raw from the butcher a few times and lightly seared a bunch of times and hasn't killed me yet.

Today some friends and I competed at a rice and gravy cook off.  We didn't place, but we made a damned good gravy with chuck steaks and tasso.  I learned a few good techniques from my teammates to up my gravy game.

I make a lot of Mexican beans every month.  MIL likes the ‘juice’ she calls bean soup.  It’s simple, now, sort the pinto beans removing any rocks or debris.  Drop some bacon, doesn’t need to be much, 3 slices, quartered.  Fill the pot with water and cook.  I used to use a haro, 6 hours+, stirring regularly…until I found the joy of a pressure cooker.  1/2 hour, take the lid off, boil a bit until the beans & water turn slightly pink…done.

I strain the beans, mash them slightly, in the strainer, and package them to be frozen.  

MIL gets 1 1/2 cups of juice, per bag, 30-45 bags a month.  She eats her ‘soup’ everyday.  I try to find creative ways to use the refried beans.  

Tonight, is chorizo beans, scrambled eggs, wrapped in a tortilla.
