Well that was a productive five hours or so. I would've started earlier, but running a chain saw at 8:30 am on a Saturday seemed inconsiderate
We had one hell of a storm here last weekend which brought down a ton of trees and limbs. Cleaned all of it up on my property and then went back to the back field that hasn't seen a mower in a few months and turned it from this  Attached FileInto this  Attached File

Tender loin was trimmed, wrapped in bacon weave, and has been on the smoker about 30 min. Smoking at 225° to internal temp of 120°.

Bacon wrapped filet pulled at 112°. I will sear it for each person. It's all resting now, should come up to 120°. Also grabbed a meat warmer from thr office kitchen so can get it under a heat lamp soon.
