| The other day I did breakfast burritos by modifying the mountain man breakfast. I replaced the sausage with chorizo, you could do it with either meat really but I think it's better with chorizo. |

I made some real easy potatoes this weekend while camping. I had prefried about 2 lbs of bacon and diced it up at home.
Slice about 5 lbs of redskin (or other)potatoes Layer potatoes, shredded cheese and bacon in dutch oven. Just keep making layers until you get near the top. I added a half stick of butter on top of final layer just for kicks. I cooked for 1 hour with 6 coals on the bottom and 8 on top. I added some extra coals for the last 10-15 minutes to brown the top layer of cheese. They turned out great! I would add some herbs next time to each layer. |

Researched that era and what white wine might be available at the time for cooking and where the fried chicken was actually cooked/made ( region). Had to look up chibols too, lol. Townsends video changes and adds stuff, i wanted as authentic as possible. Actually had trouble finding riesling wine, the place i got was very small winery. As far as research, i just looked for white wines of 18th century, and this popped up, the rhenish (Rhine) along with it being mentioned in link below. While I realize Nathan Bailey was British, the rhenish might not be what he used since its origins are German. But he never specified but next time ill look at 18th century British white wines, or french as my research says wines werent produced much in UK at the time. When the Townsends link first got posted, i went a search for the org recipe, one of the links i found was the one below, it was the first mention of Rhine wine and that took me on my search for that particular type and i jus ran with it. I built the base for another project years ago; the three rail road tie plates plus concrete in the tube = a pretty stable platform. I just saw your question, sorry for the delay. The wire shelf is exactly that: a wire shelf from 2x4 adjustable shelving given to me by a friend. He was the manager of a local Cracker Barrel and they were changing them all out. And the cooker/grill is welded to it underneath the grill. |
