This. Provident Pantry has a pretty decent freeze dried mozarella.

About 10 years ago my wife (then fiancee) and I taught ourselves pizza making, and doing so
from all storage food was one of the things we experimented with. Not perfect but very, very good.

We also gained 10-15lbs each, so be careful!

If you can get hold of some raw cow milk, farmer cheese (boursin) and ricotta are pretty easy to make.  Raw goat milk, and you've got chevre.

We used a can of the freeze dried cheese.  It was not too bad, but we did not try pizza.
We baked a casserole and used it in stove-top cooking.   Key seemed to be rehydrating, then letting it sit in a strainer for about an hour to drain.

Don't forget you can use tomato powder to make your tomato sauce. That stuff can last 20-30 yrs
