I'm thinking about using an SKS for coyote hunting in Arizona. Where can I buy scope mounts for it? What bullets should I use? Also, what is usually the range for shooting coyotes?

I wouldn't really recommend the SKS for a coyote gun.....it's just not reliable enough at the ranges you might expect to be shooting from and the 7.62 X 39 leaves a rather large hole in the hide.  I do a lot of calling/shooting for coyotes and I use a DPMS AR with a 16" bull barrel.  It is short and light so it's easy to carry through brush and for long distances and it can reach out there and touch if you need it to.  

However, if you are set on using the sks, you can get an inexpensive scope/mount here

As for ranges, you can expect anywhere from right on top of you all the way out to several hundred yards, I make most of my shots inwards of 100 yards though.

If you put a scope on, make sure its a short one. You dont wanna crack your scope with an ejected shell.

And don't buy a scope mount that attaches to the dust cover.

Oh, and if I recall correctly 7.62x39 drops about 3" at 200yards from a 16" barrel.

Scope that mounts to the side of the reciever is best.  Also I've heard Winchester makes some good, accurate ammo in 7.62x39.
