 I thought my polytech and Norinco(both stamped) were true AKM's ? Is this not true ? Is it because of 1.5mm receiver? I would choose these over maddi or sar any day.

The term "AKM" is used loosely often times to describe all stamped receiver rifles or at least those that aren't of the milled variety.  It kind of depends who you talk to regarding "AKM."  

Both of your Chinese stamped receiver rifles were modeled after the Russian "AKM" so you can still consider them in the "AKM" category despite the receiver thickness since they don't have the milled receiver.

No, but they're not subpar to an AKM, either.

They're just different. The rivet pattern is different, the reciever is different, the barrel is different, the gas block is different, the front sight tower is different.

The Chinese stamped AKs are basically just milled AKs with a stamped receiver. The Russians changed all the above mentioned parts when they changed to the AKM.

Strictly speaking only a FA rifle produced in the Sovier Union is an AKM. Those produced in other countries have other designations.
Your Chinese rifle is not a direct copy of the Soviet rifle. As you noted, the receiver is thicker. Most (all?) Chinese rifles have the AK 47 style gas tube that is vented. AKMs have the vents in the gas block.
AKMs have a single hook trigger to accomodate the rate reducer. The Chinese did not adopt the rate reducer and continued to use the double hook trigger. I don't recall seeing a Chinese semiauto rifle with a single hook trigger either.

Closest thing to a civilian AKM would be an Pre Ban Egyptian Maadi (imported by Steyr), since they were built on original Soviet tooling  that was provided to Nasser's government.

As mentioned, it will depend on other folks' definition of the acronym.  

Technically speaking the only "AKM" is the Russian version.  The rest are variants of it with their own nomenclatures given by their respective countries of manufacture.
