So, I've got a pistol built now, get my stamp back in a couple of months, so I'll be needing a normal collapsible stock buffer tube after that.

Is there any difference in quality between the different ones? What are regarded as the top 3 out there?

BCM or Stag/CMT mil-spec, 7075 are regarded to be "the best".  Vltor also makes a nice one that's 5-position.  

That said, I can't recall ever seeing a picture of a busted receiver extension where the rest of the rifle was A-OK.

I like the PWS receiver extension.  No castle nut to have to worry about steaking or coming loose.  I've been using one for a couple of years now, and it has always been rock solid.  I already have my second one waiting to go on an AX556 lower that I should be receiving very soon.  The drawback is they are not cheap, but it's good stuff.

Add LMT to the list of GTG receiver extensions. Some don't like the gray finish, but, if you use the rifle as a tool, and not a
show-off piece, it does not matter.

I've got a LaRue receiver extension and I like it.  I think as long as it's made from quality metal and has what you want it's probably just fine.  I like the LaRue one because it's got the laser markings on the top so you can see what position it's in.
