I've gotten this far, trying to decide on what barrel for this. I'm inclined toward a 723, were those made on A2 uppers?

the 723 was on an A1 or A1/C7 upper.  The 727 was on the A2 upper.  You will need a M4 profile barrel, delta pack, and A2 Flash hider.  Technically the barrel would be 14.5" but that makes it an NFA build so a 16" will do fine.  Your A2 lower and CAR stock are a good start.

A 14.5" M4 profile barrel would be correct for the 727. I used a Colt 14.5" M4 profile barrel with a pinned and welded extended A2 FH on mine.

The receivers you have are not correct for a 723 build. As was stated, they used an A1 and/or A1/C7 upper and most were built with an A1 lower. Some of the transitional 723s (very late version) came with A2 lowers. You do have a good start on a 727, although most of them had A1 lowers to begin with while some did use the A2 lowers.

Thanks! Then 727 it is. Just found a 14.5 M4 barrel with a pinned extended A2 flash hider, it should be a fairly accurate build.
