I just finished building my first AR and I wanted to check the headspacing. Using the "go" gauge I tried to push the bolt closed with my thumb. No luck. Next I gave it a gentle smack with the heel of my hand and it snapped right in. Next I tried the "no go" gauge with the exact same results. I couldnt close it with my thumb but a gentle smack and it closed. WTF?

Make sure you remove your extractor from your bolt then give a gentle push do not smack anytinng

Sounds like the headspace is off.  If you are in doubt and having issues I would recommend taking it to a qualified gunsmith.  Remember this always if it does not fit do not force it that is how you mess things up and cost yourself more money.
