I just switched my M&P15 to a FF handguard from YHM. When I put the new barrel nut on the rifle, I hand tightened it as it advised in the directions, and then checked to see whether a hole was lined up for the gas tube.  It was not, and I tightened to the NEXT hole, which aligned the barrel nut and the gas tube. I know I probably should have used a torque wrench, but I did not because I tightened only to the next hole. It was a good bit of force on the barrel wrench, so I'm pretty sure I made the 50 pound/ft minimum, but I don't know if I might have exceeded the 80 pound/ft maximum.  I'm not sure what to do if that is the case, as the previous hole is just finger tight.  

Is there any serious problem associated with over-torquing the barrel nut?  Should I take the whole thing apart and re-do it with the torque wrench?

As I recall the spec is 30ft/lbs minimum OR whatever you need to get to the next notch. If it's together I'd not be messing with it. Backing off and tightening 3X (next time) can get you to the next notch with less torque. BSW

30 lb/ft minimum, then tighten until the next notch in the barrel nut aligns with the gas tube hole in the upper.  Do not exceed 80 lb/ft.
