I am in the process of putting together the parts for a build and am curious what the different weights of buffers do.

Common sense would say that the heavier buffer will result in obviously a heavier gun but less felt recoil. Would that be accurate?

It also affects cycling speed, e.g. a heavier buffer will slow down the BCG which therefore affects ejection and feeding.

I too am curious as what the different buffer weights do, pros and cons, and how to match them with the different springs that are available.

There is a pretty good explanation of buffer and spring applications at tacticalsprings.com. I found it very helpful when I was trying to correct one of my rifles that was overgassed and shooting hard.
