Found these on the SAW website and was wondering exactly what the differences are between these?

Mostly weight.

I figured weight had something to do with it but what is the weight difference and why?

Which one is what is called the "H" buffer for example?

What is the reason for 2 different Carbine/M4 buffers?

It's because Colt has experimented with various weights of buffers to slow down the cyclic rate of the M4.  PRI came up with a better solution: the Fat Boy gas tube, which has the same internal volume as a rifle-length tube, but in carbine length.
