Do most of you extend your stock all of the way out?  What about when shooting with iron sights, how close should my eye be to the peep sight?

always follow this simple rule: "nose to charging handle"

No. I use one or two clicks back, that's it. It all depends. Usually I run it at 1, when I'm sitting, or standing, and when I shoot prone, I run it at 2 clicks.

Depends on the scope, its eye relief and mount.  With a cantilever mount, the scope can be placed farther forward and it may allow you to do the nose to charging handle thing if its eye relief allows.
Nose to charging handle is just one way to get a consistent posture, I don't think it overrules everything else like a good cheek weld and full sight picture.  I for one will try to obtain those two first, if it happens to be nose to charging handle, so much the better, if not, having a good cheek weld and sight picture will still allow me to shoot well consistently.

Conversely, if you use nose to charging handle but get a crappy cheek weld and see only a partial sight picture, how will that help you?

With a 4x32 ACOG and its 1.5" eye relief, I use the 2nd position (1st being completely collapsed).

With this Mk4 3.5-10X LR/T, all the way extended unless I use a cantilever mount.

With an NV scope, there's almost no eye relief, then it's all the way collapsed.

This question is like asking where do you adjust your car seat in your car......

Adjust it to fit you and your style of shooting... pretty simple.

Nose to the charging handle provides a consistent reference point thats hard to forget. No matter your legnth of pull the sight picture will never change with your reference point.Im 5 10 and I use 4 or 5 posistion depending on how many layers of clothing im wearing.

You just have to decide weather to use the sights like a "loipop"with the front post resting just under the target circle or center hold where the impact is right at the top of the post and you aim at the center of the target circle.Any way you do it nose to the handle will keep you consistent.

Thanks for all of the advice.  I just got back from the range and tried a few things.  2 back seemed to work pretty well.  My first time with the nose against the charging handle didnt do much for me, but the second time I tried it, it seemed to work pretty well.

One or two clicks open works well for me, unless I have to back off more for eye relief for a scope, or shooting prone.

Keep in mind... the "Nose to Charging handle" is a training technique developed by the Military as an Easy and consistent method to get Mass qty's of new shooters to be consistent and is not necessarily a requirement to achieve accuracy.. I use a Red dot and have not shot NTCH in years. Which is one of the advantages of a reflex sight.
