I've got an aimpoint ARMS mount with the forward raised extention on my flattop rra m4gery.  I was wondering, if I put a scope in that one ring forward of the adjustment knobs would it be stable enough for shooting?  Or does a scope absolutely require a pair of rings.  I managed to fit a variable 3-9 on my flattop with an arms 40 squeezed underneath.  Feels like a good setup but i dunno...  Thanks

Because of the length of a conventail scope it does require two rings to keep it zeroed.  Either the scope or ring will end up bending or breaking sooner or later.
