I have a Colt with a factory collapsible stock on it that is "peened" (is that the right word?) on. How hard is it to remove the stock? I know I need a spanner wrench, but to I just keep apply pressure and turning until it breaks through the peening? I'm taking the stock off to replace the plate with a single point sling plate.

This is precisely how I removed the staking on my Colt buttstock. It was easy to do with enough leverage.

Oh yeah! Staking. I forgot what it was called.

Sometimes a "staked" lock nut doesn't come off to easy. I had to remove a bunch of buffer tubes one time and found it's better to "Dremel" the staked part of the nut to release and buy a bunch of nuts, to be replaced.

Dremel on the peen will work and I would add a little loc-tite instead of re-peening or staking the nut.
