I wanna know what the best set up for a mid to long range carbine hunting rifle would be? I will be hunting mostly deer, elk, and boar but I want something that can stop a bear too. It also need to be california compliant. Thanks for any help.

1.  Caliber = ?  I would guess .308/7.62x51mm minimum for the game you listed.
2.  What is mid to long range to you?
3.  By carbine do you mean a carbine stock or carbine-length gas system, or both?

My first pass at your rifle would be an SPR-type build in .308 with an 18" (min.) barrel and rifle-length gas system.

I like .308, but 7.62 wouldn't be bad either,  100 yard to a max of maybe 600 I would imagine I could make it much farther. I was looking for carbine all around because I wanted a home defence rifle too but 18'' should be short enough to work.

I wouldn't rely on a 308 taking an elk at 600 yards

223vs5.56 is opposite of 308vs7.62x51. 308 is slightly stronger than 7.62 so any 308 chamber will handle either one and most ar10 barrels are chambered in 308. My rainier arms match barrel is actually stamped both

.300 Win Mag or something along those lines, especially if you're possibly going to shoot bears.

"Carbine" and "600-yard shots" are kind of antithetical. It may work, but is hardly the ideal tool for the job.

You're really looking for 2 very different rifles. A scoped bolt-action 300 Win Mag or equivalent for shooting elk/bear at 600 yards, and an AR carbine in 5.56 or 300BLK for smaller game or home defense out to 200 yards or so.

your looking for a high power bolt action and a 6.8 for deer/boar/HD. round is great past 200 yards.  walks all over 300blk all day.  unless you want a can.

Yep. This. I wouldn't try taking an elk with a 308 past 300 yards, but that's just me.
