I've done a quick search and can't find any reference that would answer this question, so please bear with me. Is the rubber eye-cup on the M2 type optic removable?

Yes, it is.  I had mine removed the whole time I owned it.  I thought it was a useless piece of junk.  It would never fold up correctly and would block my view through the scope.  YMMV.

On the other hand, I LIKE the rubber eyepiece.  I place my face against it and I am at the correct eye relief distance, plus it blocks out light from the side.  I like it and use it.

If nothing else it makes a good coushion for your eye socket since these scopes have such poor eye relief.  I had one on an FAL and even with the fairly low recoil of a heaveysemi auto rifle the scope would contact my shooting glasses with every shot.  YMMV.  Optical clarity is great though and they are built like a tank!

I had a Leupold Vari-X III 6.5-20x on another rifle, and have to admit that though the Leupold was higher power, it was no clearer or sharper than the IOR M2.
