Even if I load bullets a little long, should I reliably be able to just put one in the magazine and it still function? Planning on hunting with my ar, and even though I hope I don't need a second shot it would be nice.

You can single load a long cartridge through the ejection port. Service match shooters do it all the time.
Just make sure the bullet does not actually engage the rifling and you should be GTG.

You should be able to get out to around 2.260 and still fit.
