I have almost zero scope exp., How much power do I need to make percision shots out to 500 yards or so.

Also, eye relief. How much is good on a .308? I don't want to eat the scope! I looked at a Meopta Meostar, but it only has 3" of eye relief. Sounds rather close. Otherwise I'm considering a Nikon 2.5-10x50 Monarch gold, with 4 inches of eye relief.

I shoot 1000 yard competition with a Nikon 2.5-10X44 set a 10X.  I use the exact same rig to shoot at 100, 200, 300 yards and anywhere in between 0 and 1000 yards.

What is important here is range of adjustments.  I know nothing of the Meostar.  But I can assure you the Nikon you are considering will do the job, provided your rifle, load and you all do your job.

4 inches of eye relief is plenty for .308, it doesn't really kicj that much.

Some folks will advocate higher magnification, others will suggest fixed power scopes.  I think 10X is plenty, remembering that even at that magnification I can detect my pulse in the scope.  Also, when it gets hot out there, the mirage starts flowing and magnification starts working against you.  What is critical here is resolution and clarity and the Nikon Monarch has all that.

IMHO 10X is plenty at 500 yards unless you are planning to do some benchrest type shooting.  

As for eye relief, 3" is plenty on my AR10.  IIRC the TA11 I used to have only had about 2.5" and I never dotted my eye with it.  YMMV
