For my 2 recent builds that I'm doing for a "friend", I decided on using a pinned non adjustable gas block for both of them.

One is a 7.62x39 and the other is going to be a .308.

I read a lot on these forums about people frequently using adjustable gas blocks on both of these variants to get them to run correctly and I'm getting a little worried that I f-ed myself. I'm worried that if there are any issues in my build I won't be able to remedy them.

Am I just overly paranoid and will I be able to fix any issues by way of buffer weight, buffer spring tension, etc?

adjustable gas blocks only reduce the gas flow. unless your builds turn out drastically over gassed to the point of malfunctioning. that is the only "get them to run correctly" condition it would address.
I'm using this on my 7.62x39 to help reduce recoil. it works good. but it would run correctly without it. it's an option if you can't use an adjustable gas block

Yes.  Magazines are the biggest issue with both of those.  Adjustable gas blocks will not fix bad mags.
