The paint on my AR is wearing off and I want to strip it off and change the color. Would paint remover damage anything? Specifically the A2 stock. Thanks.

it might damage the stock but not anything that is aluminum or steel

just remove all the plastic parts before stripping

I wouldn't get any stripper on the optics either

any Loc Tite might dissolve too

Try soaking it in D.O.T. 3 Brake Fluid overnight first.
(a) It does not harm the plastic, rubber, aluminum and steel parts of your brake system.
(b) While not orderless it is fume free.
(c) its cheap.
(d) there is a reason for the warning on the bottle that says do not spill on paint (do not ask me how I know this part)

I use it and it it works pretty good.
