What height of rings do i need to mount a 1" scope on a flat top AR? do i need high or extra high?

Usually extra-high but not always, there's no standard. If they list the specs, you're looking for the centerline of the scope to be around 1.5" above the top of the receiver. Look at this one just as an example, it's 1.1" from the base of the ring to the bottom of the scope tube. If you can visualize your scope mounted in there, the centerline will be another 1/2" higher, so 1.1" + .5" = 1.6" high centerline.
