I have a Bushmaster XM15-E2S and I want to swap the regular stock with a collapsible stock, What's involved with this process?

Simply removing the tube & old stock & installing the new one. For the collapsible set up you'll need a stock wrench to tighten the castle nut & you're g2g. You need the receiver extention (aka buffer tube), castle nut, end plate & carbine buffer & spring.
