Does anyone know what the perfect thickness of a wooden block should be in order to support the trigger "ears' when installing the trigger guard roll pin in order to help prevent the ears from breaking off?

Use padded vice grips or a c-clamp, that way you don't have to worry about supporting it with a block of wood.  Just put the trigger guard in, insert pin, and then start tightening the vice grips or clamp.

I also use the vise method of installation.  I think it works really well.

I have used a 2x4, until someone mentioned the above, and that is what I have done for my last 6 builds.

Less risk of snapping the reciever.

Put one together last night, and used a set of channel locks wrapped with tape around jaws. Worked like a charm.
