What weight vmax would be the best to go with for hunting deer? 1:9 twist barrel. I had read somewhere that 75 grain wasn't very stable?

None, I would go with a good, bonded, softpoint or the Barnes TSX.

No VMAX. The 75 AMAX could be used, but it won't fit in an AR magazine.

USE a HP or HP-BT. The Federal V-shock 55gr HPBT is great for deer! I don`t know why in the world anyone would want to shoot a deer with a soft point when you can shoot one with a Hollow point or even better a Hollow Point Boat Tail. I have killed a ton of deer with 5.56mm (223) and HP or HPBT is the way to go.

The Barnes as said, i have some Federal loaded with 62gr Nosler Partitions you can pickup off the shelf and they are excelent on white tail but of course the Barnes is better,imo

1:9 should shoot a 55gr bullet well.

As far as what to look for, the nosler partition is known to be a good performer on deer sized game.  Here it is in 60gr, which should come out of that R15 pretty nicely.
