First, welcome to the site!

I can't help you with the 1911 stuff but...

Get yourself a good set of roll pin punches, roll pin holders, front sight bench block, DPMS multi-tool, upper and lower vice blocks and some hi-tech grease. All of these items can be found at Brownells but I like the upper vice block that ADCO carries (the one with the front and rear takedown pins).

That's all I can think of for now but I'll add more later if I think of something else.

For a 1911, you will need about the same tools as for an AR with the addition of perhaps a few different punch sizes, and perhaps a good set of allen wrenches depending on how you are outfitting it.  A good screwdriver for the grip screw bushings is nice to have too.

If you are building a 1911 from the ground up you will want some honing/polishing stones and a good flat fine tooth file as well.

OH and a small vise, but you will need that for the AR anyway, as well as receiver blocks and a good armorers wrench and a crescent wrench.  The DPMS armorer's wrench will pay for itself in saved hassle the first time you use it!  It's big and heavy and it WORKS!

If you are doing a kit with an assembled upper you should be fine with just a couple punches, and hammer and either a CAR stock wrench or a good BIG flat blade screwdriver depending on the stock type you choose.

How much 'build' are you going to do?

If your upper comes pre-barreled (as is the case with many complete-minus-lower parts sets), then all you really need is a few different sizes of screwdriver and a pipe-wrench for the buffer...

If you are literally assembling from individual parts, see above....
