what would be the best route to go in building a AR in 308win (or 7.62)  I want something other than dpms..

It depends on what you want to spend ... Noveske makes really nice 308 parts (barrels, lowers etc etc) but you can wrap up some serious money in a 308 Noveske build but damn it would be sweet ... Rainier Arms has some of their stuff.

If it were my build I would probably shop around for some Armalite parts or even a complete upper to try and keep it within my slim budget. YMMV

I went with an AR10 gunsmith kit from DSG Arms and a Noveske barrel and couldn't be happier. The kit contains upper, lower, BCG, and all the internals. You just need a barrel, stock assembly, pistol grip, and rail/handguards. Seeing as I would have changed all those parts out on a factory rifle anyway, the kit made perfect sense.

with Armalite parts  do you have to use their mags?  or can you use FNFAL mags?

I'm pretty sure only RRA lowers use the FN/FAL mags.

I have been slow getting back here to read post.   what if any down side to using FAL mags..  I have more than a few good Mags that go to my FNFAL.  (which is to be sold )
