I have a 11.5" BCM ion stainless barrel and wasn't sure if I should use a stainless gas block. I know that its not always good to have two different metals in contact with each other. So would it be better to use a stainless gas block instead of a steel one?

Yes, it would be better, but not required as even a regular steel gas block is parked or otherwise finished
in some way so there is no real metal to metal contact, and what little there is the disparity between steels
isn't so much that it would cause issues. Buy whatever you want and use with confidence.

I would, but it's not like a different metal will eat through your barrel, Ha-ha.
Stainless, on Stainless just looks nicer. And I do it that way. Also I have a Stainless JP adjustable gas block on a chrome molly barrel. Not even concerned about it Do what you want. Although I don't recommend Aluminum gas blocks ( Personally )

I should note that my above comment also excludes
aluminum gas blocks, I wouldn't use one on a center-fire AR, EVER!
