I just bought an adjustable trigger made my Jard, and during installation I have run into some problems. The sear engagement screw screws up in the pistol grip screw hole.  It has to protrude into the receiver about an eighth inch. This is not possible because the hole is not threaded all the way through, im going to have to buy a tap to tap the threads all the way through.  The directions calls it the "1/4-28UNFx1/2 socket set screw" .  What size tap do I need to buy?

1/4" X 28 pitch.

I don't know much about taps, but does the "28" mean the screw size, and the "1/4" mean the size of the screw?

1/4" is the nominal outside diameter of the screw shank. 28 is the number of threads per inch (TPI).

UNF means Unified National FINE thread.  UNC means Unified National COARSE thread.

When you go to use your new Tap, go slowly working it back and fourth, using a good amount of oil as you go.  And you may need to shorten you pistol grip screw too as it might bottom out at its current length.
