I just noticed that when I lock the bolt back, and smack the stock- the bolt will release.. is that right?   do they all do that?

Yes, when you smack the stock without an empty magazine installed, the bolt carrier will move slightly rearward and release the bolt catch.

This is normal.

A loaded magazine does not hold the bolt open, so yes this is normal.  Please read your user guide or one of the posted TMs on this site or for that matter I can send you a .pdf of one before you do something you can not take back.

He probably means it will chamber a round when the bolt is locked back by the bolt catch.

huh
inserting a loaded mag doesn't release the bolt carrier though. a loaded mag a locked back bolt and a whack on the stock equals a loaded chamber.
