I sighted in my 10.5 at 25 yards, 1 inch low. I was told this would get me dead on at 50 yards and a tiny bit high at 100 yards.

Was I informed correctly.

I ran out of daylight at the range so I only go to shoot 25 yards.

No idea unless you know what your muzzle velocity is.

Should be pretty close. Only way to know for sure is to shoot at 50 and 100 yards.

longer range you should sight it 1/2 to 1 high at 25 yards as bullets tend to drop over distances

1" high at 25 yards is roughly 3" high at 50, 6.5" high at 100, and almost 9" high at 200 (exact numbers will vary based on bullet weight, BC, and MV).  It's roughly a 15 yard zero.   That's generally a bad idea, especially compared to the much flatter trajectory of a 50 yard (or 50 meter) zero.

No.

I'd go with a 50 yard zero and adjust accordingly for shorter and longer shots.

ETA - Depending on what you're using your rifle for.  If it is strictly really short range stuff, such as room clearing or HD, a shorter zero would be more appropriate.
