Is it possible to turn a metric barrel down to a lighter profile (minimum diameter allowed)? If so, would it reduce a noticeable amount of weight? cause any problems (i.e. overheating, etc.)?

Coming from a non-barrel smith, most FAL military barrels I've seen are about as thin as I'd want to see a 7.62x51 barrel.

sure you can, but I can bend one now. It's too thin as it is, you don't want to go any thinner
