OK, here's the problem.

I just bought a set of Hornady 7.5x55 dies and full length resized my brass.
I deprimed, resized, turned case 180 degrees and resized again.
I'm trying to reload 308 moly coated bullets.

The brass after resizing is .305
The expander button on the die is .306
The bullet is .308

The moly coated bullet is not boat-tailed and doesn't want to fit in the brass by hand.
I tried a boat-tailed Hornady bullet wich measures .307 and it fits by hand.

How do I get the Moly coated bullets to start in the brass?

Try a Lyman M die to slightly expand the case mouth.  Lyman's web site has a description and drawing.

metric conversions wasn't my strong point..........

7.5 mm = 0.295275 in

I'd contact the mfn of the dies and get a recommendation on a bullet.  Or contact re-loading book writers or do more research on the 7.5 mm. (just to make sure).

I load a lot of Hornady 55 flat based bullets for HP practice,, I cannot seat a bullet in my cases by hand,, but have no problem seating them in a die,,, have you even tried it?
Just seat the case in the shell holder, then hold a bullet on top of the case as you run it up into the die,, slides right in.

I'm pretty sure 7.5 ammo is loaded with .308 caliber bullets, but it wouldn't hurt to talk to the die makers about it.

Those die dimensions sound like they'll work alright. What is the inside diameter of the sized brass? Have you tried to seat a bullet and had it crush the case mouth?

YES, YOU'RE RIGHT!

I found 7.5 Swiss........and the book says .308" bullets for that one.

Euros like to size things off of bore diameter and we like to do it according to the groove.

Even so, 7.5 is rounded off a bit.

That's how I do it.  It helps to have a die that guides the bullet and brass as it is being seated.
