I want to make or buy a large gun safe. At my local Scheels, they have their AR15 rifles inside a glass case with steel cage doors to protect it. Can anyone tell me what they are called? I tried looking them up and researched but I came up with nothing.

Normal reference is a security cage. Different levels of "hardness" and size, most are custom jobs. I'm not sure you can buy prebuilts in the toughtness you'd want for guns.

To gain any real level of security you are likely to exceed the price of a decent safe.

Police equipment sites sell them for police armories.  Of course, the "armory" is always at a station where its crawling with cops.  Burglary is not their main concern.

This ^^^

Cages are use in places where there is almost always a fairly heavy security presence for a reason. They are relatively easy to break into.

Give me a battery operated grinder and I'll make quick work of the expanded metal sheeting found in most "cages".
