I picked up a Remington 1100 for basically nothing today. I'd like to convert it into a 3gun/home defense shotgun.

In doing some research, the ETA Devastor seems like a pretty good setup. They will convert customer shotguns for $999 if you want the full kit, and less depending on which accessories you don't want. I'm strongly considering it, but my internet research hasn't come up with much as far as the reliability of their recoil system. Was hoping you guys would have some info to share.

If it was me, I would buy a few accessories (stock, light, side saddle) for the "almost free" 1100 you just got, and put the rest of the money in the back or use it for ammo.

Is dumping $1000 into that gun really going to make it that much better?

This. Probably not.

The stock adapter, lower front rail, and recoil system can be had for $500. Really not that much more than a decent pistol grip stock and forearm, but gives you the ability to have a folding stock and AR pistol grip and stock, all of which I see as pluses and worth the few extra bucks.
