If I wanted an Uzi to SBR, could I start with a full sized Uzi pistol and SBR it, or should I start with a 16" barreled rifle? My reason being If I started with a pistol, it would save me having to buy a new barrel or get the 16" cut down. I havent done much research yet but I imagine a stock would be cheaper than a barrel.

Either way would be good, whichever you prefer or can afford in both $ and time.
Me personally, I'd go the 16" carbine route and just buy the SMG barrel later.

Well, does anyone own a full sized uzi pistol and know what modifications would need to be made to attach, say, a folding stock?

Have a Vector and there were no real modifications to make.  Post stamp - remove swivel and attach stock.  Pretty easy.

I'm SBRing a Vector UZI as well. I bought the 16" barrel carbine first. When the stamp shows up, unscrew barrel retainer and replace 16" barrel with 10" barrel. I'll time myself and see if I can get it done in under 30 seconds.....
