I haven't really tried yet but I can't find much reliable information about kitchen knives.  I've seen and owned several European brands but have been underwhelmed.

Where can I find reviews and comparisons of kitchen knives?

Who makes a reliably great kitchen knife set?  

Are these any good?  A.G. Russel Knives

Who makes a great kitchen sharpener?

I guess kitchen knives aren't very tacti-cool but I still would like to get a few good ones.  The strength requirements are greatly reduced (after all, the animal is already dead) and you can sharpen them at will (if you have a decent sharpener).  Can anyone help point me in the right direction?

My dad swore by henckels.

Actually, Gerber makes a pretty good knife set as well.

Kershaw Shun Knives are good quality and will be my next purchase but I have a Kershaw Wasabi Sankto Blade that I use all the time and love it. I also have some  Cold Steel Kitchen knives that have been fantastic for what I have paid for them.

I had a set of Chicago Cutlery knives many years. They're basic walnut handled high carbon steel blades. Very easy to sharpen.



Currently have a set of Henckels 4-Star knives. They're much "prettier" than the Chicago Cutlery knives so my wife likes them more. As long as I keep them sharp, she's happy. I got her a Santoku last year to add to the set.

I love A.G. Russell... no experience with their Kitchen knives though...

You cannot go wrong with Old Hickory or Chicago Cutlery.  Both are made from 1095, IIRC.  They will not look as pretty as the fancy, expensive versions, but they will cut and are very easy to sharpen.  A Spyderco 204 Sharpmaker is very easy to use and will keep them sharp.
