I was looking into getting a Lansky system.
They had a set with 3 different sharpeners and one with 4 and 5.
Which set do I need to do a good job of sharpening?

Three stones will do a fine job.

Also look at the Spyderco Sharpmaker. I love mine, rarely use the Lansky anymore.

I had a Lansky and could not figure out which angle to use..

I bought a Spyderco and have no trouble sharpening any knife to hair popping sharpness..

Edit because I can't read.

I have the 3 stone Lansky Fine, Medium, and Course. I also picked up a Medium Diamond.  

Word of caution, don't drop the stones, they will break.

Bought Dad the Lansky = hated it.

Got him the Spyderco = loved it.

I had one with three stones.  First thing I used it for was for an action job on a LW Commander IAW National Match Armorer manual I got from Aquaintance.  Wish I could find manual again.  If you aren't doing that get the 3 stone diamond version and you won't have to worry about wearing stone down.  I purchased foot long diamond stone and it works great to use toothpast an old toothbrush and brush metal away when it becomes dirty looking.
Otherwise with regular stone you will wear out the course stone and need to replace.

Not sure if serious - but in case you are..

basic primer -

insert the white sticks (finishing) into the base so that it resembles a V.. Personally I use the edges (for serrated knives) for all my sharpening. I cant seem to get the flat part of the sticks to work good for me..

Hold knife straight up and down and draw from butt to tip as you go downward (inside the V). Light steady pressure is all you need..

Alternate between both side.. stop occasionally to test on arm hair.. STOP when hairs come off...

Usually within 10 to 15 strokes on each side mine are pretty sharp..

I got a Lanksy 3 stone + 1 serrated stone.  then I bought the Blue Sapphire polishing stone and it works great.   I use the 20 degree angle for most of my knives including kitchen knives.

Get the "Wicked Edge" sharpener. Beats the heck out of all others.

I use the Lansky on my knives with no issue.  

Never used a Sharpmaker but the Lansky is great.

I have the 5-stone version and while it does work, it's really a pain in the ass. Any blade over 4" and you have to start moving the clamp. Add to that unless the spine is perfectly square and straight, you're in for a helluva time. If you are willing to put up with it's shortcomings, it will work good. I see too many people praising the Spyderco Sharpmaker to not give it a try.

I see a lot of people saying the Spyderco is hard to get long blades sharp with.  I've got several big knives that need sharpening, what is everyone's recommendations for the best edge on a long blade?

I use the sharpmaker on my EDC knives as well as kitchen knives.  In my set I have a 10 or so inch chef's knife, and a 12" slicing knife.  For those two I just pull towards me faster than I push it down the V.  Never had a problem.  In fact I can get those knives just as sharp as my shorter knives.
