The current motion flood over my garage has three separate bulbs on it.  A switch inside the house allows me to manually operate the center bulb, while the left and right activate solely by motion.

If I want to replace the fixture, do I need a certain type of motion light, or can any be wired that way?

Its not a special type, electrician probably just hooked the center light up to a dedicated switch, and the motion sensor has its own switch also.  Any multi bulb flood light could be wired to behave that way.

The best motion detector is RAB brand. Turn on the switch and lamp comes on, the others are controlled by motion, that also has day/night sensor. Flip the switch on/off/on/off/on and all three stay on. What kind of box is the current flood setup on? You need a 3 lamp/hole weather proof cover, and a single hole in the box for motion detector. Go LED flood bulbs in a standard cheap 3 flood set up.

Most of the screw in led offereings are similar efficiency to the par38 cfl. About 50 lumens per watt. Until they improve I wouldn't  waste my money on them. Not to mention, with a good sensor it'll be on <1000 hrs a year
