I am a big guy, 2x or 3x.  I would like a rig to carry soft armor, ceramic plates and AR / pistol mags.

Does such a product exist and what do you recommend?

Well, XL sapi plates are 11x14. Throw in some 8x8 side plates (how tall are you?)
Would that provide sufficient coverage?

I have the opposite problem, I err to the "small-long" side of things. Lots of plates seem huge to me

Measurements will be key.  If you are looking for an armor carrier it will be a lot of IIIA to get proper coverage.  Big difference between an armor carrier and a plate carrier, you might be able to optimize with a PC and soft sides with plates front and back.  The vitals on larger individuals do not occupy as large a footprint as the external frame would suggest.  Work backwards from the most likely threat, your anticipated environment, and it may suggest a full armor carrier after all or you may be ok with a PC.  Just a couple of thoughts.

The SKD PIG Plate carrier may be what you're looking for.  One size fits small to XL plates, good amount of real estate for your needs, soft armor compatible.  I definitely enjoyed the one I had for awhile.

I mean no offense, but you might do better for yourself by losing weight and getting in shape before investing in gear.  That is more likely to contribute to a long life than being able to run and gun.
