It is possible to blacken stainless steel.  Won't chip off like paint.

Start here.  Need to find a container (plastic shipping tube?) to contain the solution and barrel.  Read the reviews and instructions.  Cleaning with muric acid seems to help. I'm thinking of trying it on my Colt Commander slide.  I'm not fond of two-tone pistols but less fond of shinny ones.

what about sending a chrome barel m1a to be coated in let's say cerakote aor2 or multicam?

A lot of custom builders are using Cerakoat on stainless barrels.
My buddy has a total custom bolt rifle, semi-custom Schmidt and Bender scope, and titanium suppressor combination that cost around $15,000.

The custom made stainless barrel is coated with Cerakoat and it's standing up perfectly.

Lots of folks will paint your rifle barrel but if all you want is to blacken it why bother?  And even if the blackening doesn't turn out as you'd like paint is still an option.
