| Looking for a paleo artichoke heart dip recipe. No dairy or mayo wanted in recipe. I don't like the versions with spinach or avacado in them. Prefer taste to be Italian /Mediterranean ( bright, maybe slightly lemon-y) . Something that's a pulse in a food processor and can put on a cracker or eat directly with a spoon. |

Serve chilled, or at room temperature, with tortilla OR Beans and artichoke "salad" 3 cups white beans, drained 1/2 (14 ounce) can artichoke hearts, drained and quartered 2/3 cup diced green bell pepper 1/3 cup chopped black olives 1/4 cup chopped red onion 1/4 cup chopped fresh parsley 1/4 ounce chopped fresh mint leaves 3/4 teaspoon dried basil 1/3 cup olive oil 1/4 cup red wine vinegar salt and pepper to taste Directions 1.In a large bowl, combine beans, artichoke hearts, bell peppers, olives, onion, parsley, mint, and basil. 2.In a jar or small bowl, combine oil and vinegar; shake together or mix well. Pour oil and vinegar over the salad, and toss to coat. 3.Cover and chill in refrigerator for several hours or overnight, stirring occasionally, to let flavors blend. using this as a dip, I'd mince the veggies rather than "chop" the veggies.. hope that helps, MOST artichoke recipes |

| Thanks. Those should work. I'll have to modify the one since I have a raw tomato allergy. And as for the diet comment. I'm averaging 10lb loss per month without even doing any exercising so that's good. And I love the artichoke spin dips that every restaurant has , but when it's like add a pound of cheese and a bar of cream cheese it's against the paleo guidelines of little to no dairy. Down 20 since start of year and 47 more to go to be under 300. |

keep it up,,if I can help, just leave your questions here or PM Chef. chef, give it a try, for me it sucked in the beginning since im Italian and i LOVE milk, im talking 2 gallons a week. i joke that paleo is atkins and gluten free had a baby that would be paleo. and you mentioned that you do all that work and cardio, i haven't done any of that ....yet. i wanted to see how effective this diet is, and well, its pretty damn effective. 2-3lbs a week, which is average on par with correct on weight loss. all my rice and pasta stuff ive had to switch out for cauliflower substitutes and quinoa. but they say there's an 80/20 rule to keep sane, so i use that occasionally and have a plate of rice or pasta. you also may want to look into HCG injections to kickstart your weight loss, i know people are ehhhh about it, but ive had 3 different friends that have averaged 40lbs on a 6 week cycle. |

Greetings Chef, I am thinking of going with manmade, I will be starting with 2 pound batches and the natural tear when they get old. I have a kitchen aid with a grinder stuffer, should be good to start with. I will post pics when I start.
OK Chef,I was just looking at casings, they have vegetarian casings, made from vegetable fiber, have you tried it? |

compounded with Dad foreseeing this long before the vows were exchanged... sheepshead,,how you got 10lbs of this is damn near amazing, my understanding is it's a hard fish to hunt... commonly used as mock crabmeat, take the fillet, carefully scrape (or cut) away the heavy bloodline, and lightly wrap it in a single layer of cheesecloth. Then prepare a pot of water, seasoned just as you would if you were getting ready to boil up a bunch of crabs, shrimp, or crawfish, and bring it to a rolling boil. At that point, drop the fillet into the pot (the water will stop boiling). Then when the water comes back to a boil, immediately remove the pot from the fire, put the lid on the top, and allow the fillets to steep for 5 to 10 minutes (or until the fish flakes easily with a fork). All that’s left to do is to remove the fish from the stock, let it cool, and break it into “lumps” of mock crabmeat. Cajun crusted sheepshead filets 1 1/2 cups dry bread crumbs 1 1/2 teaspoons Cajun seasonings such as Tony Cachree or Prudhomme's salt to taste 2 eggs 1 cup buttermilk 1 1/2 pounds sheepshead fillets, bones removed 1 cup flour vegetable oil as needed 1.Toss together bread crumbs, Cajun seasoning, and salt in a bowl. In a separate bowl, beat the eggs with the buttermilk. Toss the fish with the flour, shake off the excess, and dip into the egg. Shake off excess egg, and press into breadcrumb mixture. Set aside. 2.Heat about 1/8 inch of oil in a heavy bottomed skillet over medium-high heat. Cook for 3 to 5 minutes per side until the fish flakes easily and has browned nicely. simple sheep head on the grill, prepare the fillets as you would for broiling, only place them gently on the grill or barbecue pit and cook them only until they flake. baste the fish periodically as it cooks to keep the fillets moist just a bit of olive oil/garlic/lemon juice mixed. or barbecue the fillets, with your favorite BBQ sauce. 1 (3 pound) whole sheepshead, cleaned and scaled 3 1/2 tablespoons grated fresh ginger root 3 green onions, chopped 1 tomato, seeded and diced 1 lime 1/3 cup soy sauce 1 lemon 1/2 teaspoon sea salt 1.Preheat the oven to 350 degrees F (175 degrees C). 2.Make three slashes across each side of the fish using a sharp knife. This will keep the fish from curling as it cooks. Place the fish in a shallow baking dish or roasting pan. Cover each side with fresh ginger, then green onions and tomatoes. Season with sea salt. Slice half of the lime and place the slices on top of the fish. Drizzle with the soy sauce, and squeeze the other half of the lime over the fish. Cut the lemon in half and set in the pan. Cover the whole dish with aluminum foil. 3.Bake the fish until the flesh is opaque and can be flaked with a fork, about 20 minutes. Squeeze the baked lemon halves over the fish before serving. Serve the fillet on the top side first, then gently lift out the backbone, while helping the flesh off the bones with your knife. It's much easier than trying to turn the fish over. hope that's helpful thank you CHEF |

It's much easier than trying to turn the fish over. hope that's helpful thank you CHEF Thank You!!! I will try these for sure!! |

Great question, thank you..don't thing anyone has ever asked about lentils...
Compared to other types of dried beans, lentils are relatively quick and easy to prepare. They readily absorb a variety of wonderful flavors from other foods and seasonings, are high in nutritional value and are available throughout the year. Lentils are legumes along with other types of beans. They grow in pods that contain either one or two lentil seeds that are round, oval or heart-shaped disks and are oftentimes smaller than the tip of a pencil eraser. Lentils are a good source of fiber. Lentils are believed to have originated in central Asia, having been consumed since prehistoric times. They are one of the first foods to have ever been cultivated. Lentil seeds dating back 8000 years have been found at archeological sites in the Middle East. Lentils were mentioned in the Bible both as the item that Jacob traded to Esau for his birthright and as a part of a bread that was made during the Babylonian captivity of the Jewish people. For millennia, lentils have been traditionally been eaten with barley and wheat, three foodstuffs that originated in the same regions and spread throughout Africa and Europe during similar migrations and explorations of cultural tribes. Before the 1st century AD, they were introduced into India, a country whose traditional cuisine still bestows high regard for the spiced lentil dish known as dal. Lentils can be prepared the day of serving since they do not need to be presoaked. Before washing lentils you should spread them out on a light colored plate or cooking surface to check for, and remove, small stones or debris. After this process, place the lentils in a strainer, and rinse them thoroughly under cool running water. To boil lentils, use three cups of liquid for each cup of lentils. Lentils placed in already boiling water will be easier to digest than those that were brought to a boil with the water. When the water returns to a boil, turn down the heat to simmer and cover. Green lentils usually take 30 minutes, while red ones require 20 minutes. These cooking times can be slightly adjusted depending upon the final use. If you are going to be serving lentils in a salad or soup and desire a firmer texture, remove them from the stove top when they have achieved this consistency—typically 5-10 minutes earlier than their usual cooking time. If you are making dal or some preparation that requires a mushier consistency, achieving this texture may take an additional 10-15 minutes. Combine cooked lentils, and chopped sweet peppers to make a delicious cold salad. Season with your favorite herbs and spices. Toss buckwheat soba noodles with cooked lentils, small broccoli florets and leeks. Dress with olive oil mixed with garlic and ginger. . Lentil salad Ingredients: 2 cups cooked lentils 2 cloves garlic, chopped 1/2 medium onion, chopped 1/2 cup red bell pepper, chopped 1/2 cup tomatoes, chopped or diced toss with a vinaigrette Dressing 2 cups romaine lettuce Directions: Combine first five ingredients and toss with Dressing. Serve with romaine lettuce. curried lentils Ingredients: 1 cup orange lentils, washed 4 cups + 1 TBS vegetable broth 1 medium onion, chopped 3 medium cloves garlic, chopped 2 medium carrots, diced into 1/4-inch pieces 2 medium celery stalks, diced into 1/4-inch pieces 2 cups finely chopped kale 2 tsp curry powder 1 pound diced tomatoes (do not drain) 3 TBS chopped fresh cilantro salt and black pepper to taste Directions: 1.Rinse lentils in strainer and sort through, removing debris. 2.Chop onions and garlic and let sit for 5 minutes to bring out their hidden health benefits. 3.Heat 1 TBS broth in medium soup pot. Healthy Sauté onion in broth over medium heat for 5 minutes stirring frequently, until translucent. 4.Add garlic, carrots, and celery. Continue to sauté for another couple of minutes. Add curry powder and mix to bring out its flavor. 5.Add rinsed and drained lentils, 4 cups broth and tomatoes. Bring to a boil, reduce heat to medium low, and simmer uncovered until lentils and vegetables are tender, about 5 minutes. Add kale and simmer for another 5 minutes. Add cilantro and season with salt and pepper to taste. Dal,,for every Indian cook,,there's a version of this recipe Ingredients 1 cup lentils 1/4 cup dry kidney beans (optional) water to cover 5 cups water 2 tablespoons salt 2 tablespoons vegetable oil 1 tablespoon cumin seeds 4 cardamom pods 1 cinnamon stick, broken 4 bay leaves 6 whole cloves 1 1/2 tablespoons ginger paste 1 1/2 tablespoons garlic paste 1/2 teaspoon ground turmeric 1 pinch cayenne pepper, or more to taste 1 cup canned tomato puree, or more to taste 1 tablespoon chili powder 2 tablespoons ground coriander 1/4 cup butter 2 tablespoons dried fenugreek leaves (optional) 1/2 cup cream (optional) Directions 1.Place lentils and kidney beans in a large bowl; cover with plenty of water. Soak for at least 2 hours or overnight. Drain. 2.Cook lentils, kidney beans, 5 cups water, and salt in a pot over medium heat until tender, stirring occasionally, about 1 hour. Remove from heat and set aside. Keep the lentils, kidney beans, and any excess cooking water in the pot. 3.Heat vegetable oil in a saucepan over medium-high heat. Cook cumin seeds in the hot oil until they begin to pop, 1 to 2 minutes. Add cardamom pods, cinnamon stick, bay leaves, and cloves; cook until bay leaves turn brown, about 1 minute. Reduce heat to medium-low; add ginger paste, garlic paste, turmeric, and cayenne pepper. Stir to coat. 4.Stir tomato puree into spice mixture; cook over medium heat until slightly reduced, about 5 minutes. Add chili powder, coriander, and butter; cook and stir until butter is melted. 5.Stir lentils, kidney beans and any leftover cooking water into tomato mixture; bring to a boil, reduce heat to low. Stir fenugreek into lentil mixture. Cover saucepan and simmer until heated through, stirring occasionally, about 45 minutes. Add cream and cook until heated through, 2 to 4 minutes. and of course Lentil soup 2 tablespoons extra virgin olive oil 1 onion, chopped 1 carrot, cut into 1/2 -inch dice 1 celery stalk, cut into 1/2 -inch dice 1 cup lentils, washed and picked over 1 bay leaf 6 cups chicken, beef, or vegetable stock or water Freshly ground black pepper Salt directions 1. Put the oil in a large, deep pot over medium heat. When hot, add the onion and cook, stirring frequently, until soft, just a minute or two. Add the carrot and celery and keep cooking and stirring until brightly colored and hot, about 2 minutes. 2. Add the lentils, bay leaf, and stock; sprinkle with freshly ground black pepper. Bring to a boil, then turn the heat to low and cook, stirring occasionally, until the lentils are tender, about 30 minutes. (At this point, you may cool and refrigerate the soup, covered, for up to 2 days; reheat gently.) Add more stock if the soup is too thick. Just before serving, taste, sprinkle with salt and more pepper if needed, and serve. Lentil Soup with Lemon and Dill. About a minute before serving, stir in 3 tablespoons freshly squeezed lemon juice and 1/2 cup chopped fresh dill, or to taste. Lentil Soup with Cumin. Add 11/2 teaspoons ground cumin along with the bay leaf. Add a squeeze of lime or orange juice, if you like, and garnish with a dollop of yogurt and chopped fresh cilantro. Lentil Soup with Smoked Paprika. Add 1 teaspoon smoked paprika along with the bay leaf. Garnish with chopped fresh parsley or chives if you like. Lentil Soup with Sausage or Bacon. Start with about 1/4 pound chopped sausage, bacon, or pancetta and cook it in the soup pot until slightly crisp before adding the other ingredients in Step 1. Drain the fat if you like or use it and omit the olive oil. Lentil Soup with Roasted Garlic. Omit the onion, carrot, and celery. Prepare and peel 1 or 2 heads of roasted garlic. In Step 1, cook the garlic in the olive oil for a minute or two, mashing and stirring until fragrant. Lentil Soup with Dried Tomatoes. Omit the onion, carrot, and celery. In Step 1 cook 1/2 cup dried tomatoes (preferably not oil-packed) and a tablespoon of minced garlic in the olive oil for a minute or two, stirring occasionally, until both are softened and fragrant. Proceed with the recipe. ladies and gentleman readers if you don't have Lentils in your preps mixed with your beans and rice, you're missing out on a very filling and nutritious variable in your menus. Chef, Subject: Onion Rings I'm a member of a fraternal organization, and during football season we serve Chili Dogs at the lodge to raise money for charity. One of the item often requested, is a side of Onion Rings. Our Lodge recently did a complete kitchen renovation, and we now have a commercial deep fryer. I can make some decent rings at home, using a batter of Beer, Flour, Paprika, Garlic powder, S&P. My question is, what is the easiest way to make a large amount of rings ahead of time, enough for 50 to 75 servings? Can I slice the rings, make the batter, dip them and then cold store them for say 24-48 hours in advanced? Also any secret ingredients that I'm missing? Like I said, mine turn out good, but not great. Thanks!

Thanks! salt and pepper...are the basic ingredients missing. you'll notice a marked difference. no you won't be able to hold these the way you're describing the process. This batter breaks down quickly, goes flat etc and wont freeze the way you're thinking, YOU can batter, fry, cool, layout on paper'd sheet pants, freeze, then bag into paper bags and refry to order OR bread them with flour, egg wash, bread crumbs and freeze them on papered sheet trays, then fry to order OR Get a "will call" cash/check account set up with SYSCO, KRAFT Food service or other in your area or Sam's Club and buy pre battered onion rings directly from a supplier..your dogs, burgers, chicken breasts, P.C's. etc will be cheaper as well.. hope that helps CHEF |

We already have an account with SYSCO, I just like doing it from scratch. It's only on Sundays during football season, so no big deal. I made small batches last season, and people really enjoyed them, just looking for tip's on how to make my life easier.
