What is the best cheese for chicken on sourdough?
My friend says cheddar, but he is wrong. |

I'm going Swiss in this case but wouldn't get mad at a slice of pepper jack.

tossup between provolone or swiss, although cheddar is good on everything.
I'll go with prov. |

A strong cheddar goes with beef. For chicken I’d go more mild with something like provolone or swiss.

Swiss, Pepperjack and Provolone are all good options, but I think a nice smoked Havarti would be best.

Fresh mozz with tomato, romaine or spinach, and a little balsamic vinaigrette.

I like cheddar. It's good on a burger or roast beef sandwich, or even by itself, but chicken pairs better with a milder cheese.

Sourdough needs some cheese with flavor. Smoked cheddar maybe? The other cheeses you list have good texture when melted; but are pretty mild in flavor.

Now I want this. |

If you use provolone you cant use that nasty no flavor supermarket provolone with no flavor. You need a nice sharp full flavor provolone. A smoked cheese or nice aged sharp or extra sharp cheddar works very well. A nice blue or fetta might work well also.
