Never tried it but heard it's good for your gut. I like sour kraut with lots of hot sauce. Will I like kimchi you think

Kimchi is awesome!
There are lots of different types too. I freaking love cucumber kimchi and radish kimchi as well as cabbage. |

I like it on top of other things.
Bulgogi/rice/kimchi=awesomeness (Please note: If you eat a lot of kimchi over time and go to the gym....people may not like you.) edit: ASS! Now I'm craving Kimchi! |

I eat quite a bit.
i only eat it fresh, i hate sour kimchi so i steal it from old korean ladies (my mom) whenever she makes it. Favorite is the stuffed cucumber kimchi, followed by regular cucumber kimchi, then onion, then cabbage then radish. |

Not great, not terrible. I was in Korea for a month on a tiny Korean Marine base and we ate at their chow all...kimchi at EVERY meal. That got old real fast. |

Both can be made at home easily but kimchi might be available in your local produce section in a little jar. (Hint: open the jar over the sink.) |

Super good and lasts forever in the fridge. ETA - maybe not forever, when it starts tasting electric I toss it. |

I prefer trying to get "fresher" local stuff than the brand name stuff you might find at the bigger grocery chains.

Proper Korean Kimchi is pretty tasty. Trader Joe's has imported from South Korea. It's tempered for the American mass market. On the spicy side, but not as spicey as I've had in Korea.

Yeah kimchee is good.
If you want sauerkraut that's good for your guts, you need non-pasteurized. The health food stores have it. It's super easy to make, but takes like 6 weeks. |

I love it, I put a little too much gochugaru in my last batch, a bit too spicy. If the market has baby boy choi, diakon, Napa cabbage, scallions and fresh ginger, I'll start another batch.

I made red cabbage sauerkraut the other day, two quart jars are currently bubbling away with airlocks.
Extremely simple and better than store bought. |

I love kimchee.
I didn't like it when I was young. There are thousands of recipes and variations I prefer mine without the white radish known as diakon You can also make your own quite easily. Look up The Perfect Pickler, good for sour kraut too. |

Every duty station has a place nearby that has kimchi,
Bulgogi and the like... One of the best reasons to join the service. |

First came out okay, but it didn't ferment. I see bubbles in the current batch and may try some next week. I got Korean peppers and radishes this time. Hope it turns out. |

Funky but delicious.
Good kimchi is great. Bad kimchi is really bad. A (Korean) friend of mine in high school’s mom made the best kimchi ever. |
