Everyone thinks: Fat Tire or some micro IPA, a Denver Omelet, and some pot brownies!

OR

COLORADO RACK OF LAMB roasted with a BRECKENRIDGE BOURBON sauce, side with Olathe Sweet Corn and wheat biscuits drenched in Honeyville Honey. Desert is peach cobbler with Palisade Peaches and sip on a finger of Stranahans Whiskey.

I think that is as close to "authentic CO cuisine" as we get.

Unless you count the burrito your threw together to eat on the ski lift.

Here's your menu OP

Colorado
trout fish tacos. Smoke trout on BGE 250' with lemon, cilantro, and green chile powder

buffalo mini burgers no explanation nessesary

Carolona

got to be pork shoulder. 3 kinds of slaw, mustard, mayo, and red. Also do three sauces, red for west, vinegar for east, and mustard for south.

Put out equal amounts of CO. and NC. beer and see who wins the beer bowl

and of coarse pot brownies for dessert

I would not say Corn  Bread is unique to the area. We certainly eat it but its not something we lay claim to like we do proper BBQ.

For Carolina I would say BBQ pulled pork, ribs, and grilled BBQ chicken. then for side items do something like green beans, coleslaw, baked beans, hash and rice,and , hush puppies.......

I wouldn't get Maurice's or use their sauce. It's ok. But it's a BBQ fast food place,. It's like the McDonalds of the BBQ world. Do a little research and make your own BBQ sauce.



Or maybe a Beufort Stew which is a staple Carolina food.

Bison is big here. I'd suggest something like Bison Nachos, or Bison burgers/sliders.  I make each of those for tailgates.

I've also seen Bison jalapeno poppers in some boutique restaurants around here, but I've never made them myself.
