My egg sauce of choice.

How does this compare to the regular?  I have a bottle of the regular I'm almost done with, and it's pretty solid heat.  I usually run a line down a taco.

It is hotter than the red and green but to me it is still pretty tame but I survived a "Lil Nitro" gummy bear".

We consider over medium with a jellied yolk, no longer runny, but not cooked hard.

Over easy are runny yolks with fully cooked whites.

Uncooked whites are gross.

I will use Tabasco if that is all that is on the table. I prefer water base sauce over vinegar base.

It's just my opinion that regular Tabasco works very well on eggs. I use it for nothing else.

Everyone saying over medium is wrong. Over medium eggs are just slightly runny. The eggs pictured in OP are very runny, which is called over easy.

Someone above posted ketchup does not belong on eggs. An exception to that is scrambled eggs. Granny would put a little ketchup on scrambled eggs to get a kid to eat them and then wean them off the ketchup.
I will do it every once in a while just for old-time's sake. Whataburger or any of the other spicy ketchup's take it up a notch though.
That said, it's only for scrambled eggs.

If you ordered an egg cooked in a way where the yolk wasn’t  set, you shouldn’t be unhappy when it arrives that way.  That’s why a lot of breakfast places ask how you want your eggs.

Not Benny in this case, just english muffin with sautéed spinach and some bacon, with a little grated cheese on top.  It’s a favorite of the mrs.

I do whip up hollandaise on occasion, though.
